Soaked for over 12 hours at room temperature, our grains undergo drying with a reverse refrigeration heat-pump dryer, avoiding thermal shock. This 11-12 hour process, ten times longer than industry standards. This preserves the nutrients, fibrous layers, aroma, and rich taste from prolonged soaking. Finally, we grind the dried grains using a stone grinder, maintaining their natural taste and nutritional value.
